Each suite is finished in the same handful of materials: a king bed under FRETTE linen, a chromotherapy shower, and a diffuser mixed by a local perfumer, so the room carries a scent that isn't borrowed from a candle aisle. Two of the four suites step onto a private pool, heated on request, and one of those adds its own dry sauna. Four suites in total, which is why the elevator rarely has anyone else in it. Le GV sits at the top of the building looking over the sea and took its first Michelin star within six months of opening. It serves Monday and Wednesday to Saturday, dinner only, seven until eleven — a Tuesday or Sunday points you to the champagne bar downstairs instead.
Nine floors up, the pool at L'étoile opens for the warmer months only — swimming, sunbathing, a drink in the afternoon sky. The beach club, 1926 La Plage, keeps its own seasonal hours from the first of May to the end of October, half nine to half five, weather permitting.
On the ground floor, Le Monde pours from seven in the evening until eleven — a stop on the way to or from dinner rather than an evening on its own. A fair way to close a day that started in the thermal pools.
