The rooftop suites

Above the lanes, a long rooftop terrace threads between the upper suites, each with its own shaded seat under a timber pergola and walls washed in blue and warm earth. Tuesday night at the cellar

From October to April, at eight each Tuesday, the wine bar turns the evening over to a single Rhodian or mainland Greek winery, working through a tasting of its premium and rarer bottles. There is no need to book ahead — just turn up before the series pauses for the summer at the end of April.

The five-course wine dinner

The Private Food and Wine Experience runs about two hours: five courses and a dessert, five of them matched to a glass of wine apiece, talked through as they arrive by the resident sommelier. The menu shifts with whatever Greek produce is in season, and reservations need at least two days' notice.

A morning among the vines

The private tour to Embona and its vineyards leaves from the Old Town by van and returns four to five hours later, having worked through a tasting of a dozen wines across several of the island's cellars and a walk through the vines themselves. Ask for it paired with breakfast at 10GR beforehand, and you're back at the bar before the afternoon heat sets in.

Rhodian wine, four glasses

Skip the full-day version and taste the island in under an hour instead: a sparkling opener from the oldest sparkling-wine producer on Rhodes, followed by three reds, whites and rosés from a vineyard that has been making wine, in some form, for about 3500 years. Book two days ahead — the tasting seats two to eight at a time.
