Villandro is a small village in South Tyrol, and Boutique Pension Erlacher keeps to its size: four rooms, half board, and a kitchen that turns out a new four-course menu every day. Angelika runs it — the site calls her Chefin des Hauses, the lady of the house — and she does not cook the same dinner twice. The pension takes no guests under eighteen. Come for a week where the day is built around what lands on your plate, not what is on a list of sights.
Dinner moves between the Wintergarten and the dining room, and it comes as four courses that change from one day to the next, built around what the herb garden allows rather than a fixed menu. That garden sits in the middle of the relax garden, and picking it is treated as its own craft — a leaf cut too early or too late works differently on the plate. Some dishes still go into the wood stove, the way they always did. There are four rooms only, so the kitchen team never has more tables than it can watch closely. Angelika, who runs the kitchen, is also who leads you through the courses at the table.
Boutique Hotel Pension Erlacher sets a minimum age of 18 in its own house rules, written at pension-erlacher.com, and read there on 11 August 2026. A house whose rule drops below eighteen, or stops naming an age, is taken off HUSH — how every house is checked.
A thousand square metres of natural garden wrap the house, planted with larch and box and set with canopied daybeds, a four-poster lounger and deckchairs on the sunbathing lawn. At its heart a heated pool runs a gentle counter-current beside an integrated whirlpool, both fed by the sun and looking straight out to the Dolomites, while a new infrared sauna warms the cooler hours. It is a wellness garden made for two, for reading, drifting and doing very little at all.
Each room is lined in weathered Alpine timber, its grain left visible against clean white walls and wide oak floorboards. A built-in bench in moss green tucks under the window for morning coffee, the bed is dressed in crisp white and natural fabrics, and most rooms open through their own door onto a balcony boxed with geraniums and pointed at the Dolomites. Nothing is loud here; everything is made to be lived in slowly.

The house lists these as things to do from here. Where a line is marked off-site it is not on the property — a dive site, a trail, a stable. That mark is ours, not theirs.
Once a week the kitchen sets aside its regular four-course dinner for a five-course tasting menu, opened with an aperitif on the sun terrace before anyone sits down to eat. It does not run nightly, so ask which evening carries it when you book.
South Tyrol treats autumn as its own fifth season, and from mid-September the pension runs a weekly five-course Törggele tasting menu built around it. It is one dinner a week, not a standing option, so it is worth timing an autumn stay to catch it.
Some dishes still come off a wood stove rather than a modern range, kept lit for the dishes the kitchen judges it suits best. It is one of the small things that makes dinner here feel cooked rather than assembled.
The kitchen is compact and the menu exclusive, and the pension says plainly it cannot accommodate every request tied to food intolerances the way a larger restaurant could. Raise any allergy before you arrive, not at the table.
