Breakfast is homemade and included, served by the fireplace when the village turns cold or out in the privet yard when it doesn't, and much of what reaches the table comes off the family's own land — olive oil pressed from their groves, wine from their vines, halloumi made the traditional way. Ask ahead and they will cook you lunch or dinner too. There are two rooms, which is why the salt-water pool outside rarely has more than one other couple around it. The Kaizer family has run these houses five generations deep, and still does.

Set against a dry-stone wall hung with old clay jars, the pool is an outdoor ozone spa filled with naturally salted water and warmed by the sun through solar panels. An ancient olive tree throws shade over the loungers, oranges ripen at the edge of the terrace, and a striped hammock waits between the trees. Mornings are for laps in soft water, afternoons for lying still and listening to the village.
Each room sits inside a restored village house of honey-coloured limestone, its timber shutters thrown open to the courtyard. Whitewashed walls climb to reed ceilings, a fireplace is set into the stone, and a mezzanine ladder leads up under the eaves. The furnishing is unfussy and warm, deep reds and old mirrors and handmade covers, the kind of room that belongs to the house rather than to a catalogue.

Ten minutes by car along the wine road climbs you to the Monastery of Chrysorogiatissa, one of the island's oldest, with its own vineyards to taste on the way. Back in time for the pool before the evening cools.
