Nokie learned Royal Thai cuisine from a nanny who once cooked for the royal family, while Martin, a former London chef, keeps the western side and bakes fresh bread, cakes and a well-loved banoffee pie each day. Dinner is candlelit by the pool or out on your own terrace, and for anyone who would rather learn than simply eat, the two of them run cooking classes as well.
