On a quiet stretch of shoreline near Lamai, on the south-east coast of Koh Samui, Villa Nalinnadda is a nine-room beachfront hideaway kept entirely for adults. The gulf of Thailand opens straight off the sand, sheltered by a coral reef where the occasional local fishing boat drifts past, and the house is small enough that its owners, Nokie and Martin, meet you at the door by name — a deliberately unhurried counterpoint to Samui's larger resorts.

The nine rooms are individually styled in a mostly white palette with quiet splashes of colour, each with a generous ocean-facing terrace and glass doors that concertina open to the breeze. Most set a freestanding tub where you can watch the water; dark hardwood floors, woven furniture and orchids carry the rest.

Rooms on the water

Whether you take a beachfront suite a few steps from the tideline or the top-floor penthouse with its wraparound panorama, each room is built around the view: glass doors run the length of two walls and fold back to open the bedroom onto a private terrace and the gulf beyond. Rain showers, separate soaking tubs and a sofa bed come as standard, and breakfast can be carried out to the balcony.

The table by the sea

Meals here are cooked by the owners themselves. Nokie learned Royal Thai cuisine from a nanny who once cooked for the royal family, while Martin, a former London chef, keeps the western side and bakes fresh bread, cakes and a well-loved banoffee pie each day. Dinner is candlelit by the pool or out on your own terrace, and for anyone who would rather learn than simply eat, the two of them run cooking classes as well.

Beyond eating at their table, you can learn at it: the owners run cooking classes covering both Royal Thai dishes and western cooking, and will talk you through each plate. A separate vegetarian menu and other dietary needs are handled in the kitchen.

Ang Thong Marine Park by boat

The desk arranges day trips out to Ang Thong National Marine Park, an archipelago of some forty islands reached by speedboat, catamaran or sailing boat, as well as jeep tours into the Koh Samui jungle.

Golf at Santiburi Country Club

One of Thailand's finest courses sits up the coast at Santiburi, near Mae Nam, about forty minutes away. Martin and Nokie play, and are happy to take guests along for a round.
