Kloveniersburgwal is one of Amsterdam's oldest canals, and partway down it a door with no sign at all leads into a cocktail bar. Ask for the room upstairs, in true speakeasy fashion, and a second door opens onto a narrow stair: two rooms above the bar, in a canal house that has poured cocktails and kept guests since 2004. It is adults-only, and made for the two of you who want the old city outside the window and a locked door between you and the bar noise below.
Rosalia's Menagerie takes its name from the private menageries Amsterdam's merchants kept in the Golden Age, cabinets of curiosities gathered on their travels, and the rooms upstairs carry that idea on: objects and stories collected over more than twenty years, stacked above a working cocktail bar. Downstairs the bar pours bespoke cocktails and spirits made locally, alongside imported bottles chosen the same way the old collectors chose theirs. You reach the rooms through a secret door in the bar, speakeasy-style, up a narrow stair that leaves the noise behind you. Two rooms only, which is why the stair stays quiet even when the bar downstairs does not.

The Anne Frank House is a ten-minute walk along the canals, and the Nine Streets, for the smaller shops, are about fifteen. Both loop back easily to Kloveniersburgwal and the bar downstairs.
Reckon on thirty minutes on foot to the Rijksmuseum and thirty-five to the Van Gogh Museum beside it. Amsterdam Centraal is closer still, ten minutes away, if you are arriving with a bag instead of leaving with one.
